Namm! is icelandic for "Yum!" - which is what most people exclaim when they try our sweets! Our goal is on the one hand to produce sweets and desserts for individuals to order through our up-and-coming website for their parties and events; and on the other, to work with different cafés and restaurants to make vegan sweets accessible in more places.
The money from this fund raiser would go into putting up a working industrial kitchen in the Reykjavík area which will be 100% vegan.For many vegans it can be an important factor to be able to buy food that is produced in a completely meat and dairy free environment. Since I don't believe I will be using the kitchen 24/7 - at least not for a while - I want to offer other chefs, bakers and companies to rent the kitchen to make vegan wares.
My name is Alda Villiljós and I have been vegan since 2014. Back then, the options for vegans were few and far between, and it was rare that a restaurant was able to make anything vegan, let alone have a vegan dish on the menu. I consider myself lucky to have had the opportunity to see veganism expand incredibly fast in the years since then.
At the start of 2017 I started working as a baker for Kaffi Vínyl, which shortly thereafter became the first completely vegan restaurant in Iceland. My desserts quickly became popular among vegans in Iceland, vegan travellers, and even among non-vegans. In 2018 I started getting regular requests for special orders of cakes and that, along with the encouragement of friends and family, I decided to quit my job at Vínyl and start my own business under the name of Namm! in february 2019.
With the expansion of veganism and interest in it, many cafés, bakeries and restaurants have started making their own vegan dishes to offer. In Iceland it's pretty rare to go to a restaurant that doesn't have at least one vegan dish on the menu.
Sweets and desserts haven't been quite as common yet, and it is true that vegan baking can be a little bit trickier than vegan cooking. When cooking it is generally easier to simply swap one ingredient out for another, and recipes for baking usually have to be much more precise, meaning hours of testing and developing recipes from scratch.
With my experience from baking both for Kaffi Vínyl as well as for friends and family, I already have an extensive collection of vegan recipes, as well as the experience to know how to convert recipes to make them vegan.
Right now, I have access to a kitchen inside a restaurant, but having my own space will be an important base for me, as well as avoiding contamination from food preparation etc. Furnishing a kitchen will take time, but once the funds are in, I will start investing, preparing and multiply the starting funds. I'm hoping to have the kitchen up and running by autumn 2020.
Until then I will utilize the restaurant kitchen to the best of my abilities to make delicious vegan sweets for all of you!
Included in the rewards is delivery within the Reykjavík area. They can also be picked up in the center of Reykjavík. If you need them delivered outside the Reykjavík area, you will need to pay postage fees. Food cannot be sent outside of the country, but you can ask to have them saved for you to pick up any time this year (end 31.12.19).
